St Columb’s College was treated to a taste of Lebanon when the owner and Head Chef from local restaurant ‘Cedar’ Simon Matta came to visit.

Pupils learned about Lebanon, a small country on the Eastern coast of the Mediterranean and about their cuisine, a culinary tradition that combines Mediterranean ingredients with exotic spices. The pupils then had the chance to work alongside the chef, preparing a local delicacy called Tabbouli. Tabbouli is one of Lebanon’s favourite salads, consisting of parsley, bulgur wheat, tomatoes, spring onions, lemon, olive oil and spices. The wonderful burst of fresh flavours and smells had not only pupils but staff as well coming back for more.
